The weather is so much colder in my part of the world, and soup seems to be in my mind everyday! I love soup, vegetables soup to be exact!
This was my cabbage soup! Cabbage is known to be good in removing toxin in the body, and cabbage is also very affordable. It can be kept longer than other veggies in the refrigerator too!
My recipe is usually a mix and match of what I have left in the refrigerator. Feel free to substitute with vegetables that you think will go well with each other.
--1 large beet, skinned and chopped into bite size
--1 medium cooking onion, chopped
--3 good size cloves of garlic, chopped
--3 Roma tomatoes, chopped
--cut cabbage into strips (I add some Napa cabbage since I didn't have enough of the regular cabbage left)
In a large pot, stir fried your onion, garlic, add salt and pepper then when they are wilted a little bit, add your beet, and vegetable stock to the pot. Finally, add your chopped beet. Let it cook until the beet tender enough to eat.
Then add your cabbage and 1 cup of your frozen mixed vegetables of corn and peas.
Season your soup with salt, pepper, and oregano to taste; and VOILA, you will have a warm bowl of satisfied cabbage soup.
