My brother just travelled to Sabah for holiday, a land famous for fresh seafood. He came back and gave me 7 star grouper. Yayyy! Fresh fish called for steamed fish cooking!!!
Ginger Soy Sauce Steamed Fish
I always fancy steamed fish more than fried fish as far as cooking is concerned because less oil is needed, and no messy oily kitchen too. Steaming fish is very easy, as long as you have all the ingredients needed. Today, I cooked the easiest type in my opinion — ginger soy sauce steamed fish.
Steps
Firstly, I seasoned the fish with a little salt, to set aside. This fish is called 7-star grouper. The fish fillet cut was so thick so I did a different arrangement of steaming.
In a steaming plate, I placed the thick part of scallion as a base, so that when I placed the fish fillet, the fish would be lifted up a bit, making space for more balance steaming, if you get what I mean.
Then, I placed the fish fillet on top of the scallion. I also placed one slice of ginger on each fillet, apparently it helped to reduce some fishiness.
When the steaming pot was boiling, I put the fish to steam. Always only put the fish to steam after the water started boiling.
While the fish fillets were being steamed, I went and julienned the ginger. Also, prepared the seasoning sauce. At times, I would use all ginger, onions and garlic, but this round, I focused only on ginger and scallion.
In a pan of heated oil, sautéed the ginger and some scallion till aromatic. Then, scooped out the ginger oil into another bowl. In this bowl, I added in some water, soy sauce, sugar and Shaoxing wine.
After 15 minutes of steaming, the fish fillets were cooked. Usually, I did prefer to retain the steaming residue as it might made the dish more fishy, so I scooped out the fish fillet into another serving plate.
Let's pour in the seasoning sauce on top of the fish. Hmmm...smelling so so good!
I had remainder scallion, so I julienned them for garnishing. Placed a lot of amount of scallion garnishing on top of the fish, I loved loved scallions. I thought I was going to eat them all.
Steamed Fish Done!
Voila! Easy peasy ginger soy sauce steamed fish that was so flavourful and fragrant. Plus, the fish was so so fresh, the flesh was soft and had its own grouper type of sweetness, together with the ginger scallion and soy sauce, it was like Chinese restaurant standard. I was happy with the outcome.
I had some leftover lettuce, so I did a basic garlic stir fry. We ate the steamed fish and lettuce with rice. What a hearty lunch!
