So, I did mention in my previous blog that I cooked two types of pasta sauces and hence we had a lot of pasta meals last week — certainly saved a lot of costs although not the healthiest. And I had some spaghetti leftover. Time for simple pasta stir fry because we had run out of the pasta sauces. Also, some different taste for goodness sake!
I popped into my freezer to see what else I got there. I still had marinated cajun turmeric chicken breast and some bacon stripes. So let's made full use them!
In a pan, I melted a block of butter and I pan fried the chicken breasts and bacon. Wow, so fragrant, my whole house smelled cajunee and baconee. Then, I took them out to be used later.
With the same with all the cajun and bacon goodness, I added in the spaghetti. Lightly mixed it around until all strands were coated with the buttery cajun bacon flavours.
I had a container of fried aglio olio flakes given by my friend which definitely helped whenever I wanted to cook fast. I dared not add so much since my eldest son seemed to have a little sore throat. A tablespoon will do. Then, cut the chicken breasts and bacons in smaller stripes, added them all into the pot too. I also added in some salt and pepper. After this, just lightly fried them all together until blended well.
Here came a plate of flavourful stir fry aglio olio with cajun chicken and bacon. Super simple yet very appetising and flavourful. We all loved this dish so much! I totally enjoyed this with a can of coffee. Like a reward to me after days of taking care and tubefeeding my son.
My husband also came home with two drinks — Thai Green Tea and Thai Coffee from Boat Noodle. What a yummy mouth-watering treat!
