Hello, community and food lovers greetings. After coming back from work I asked my husband what food we will be having for dinner. and as usual, he said to check in the refrigerator. And without wasting time he found many things from the refrigerator. carrots, cauliflower florets, onions, mushrooms, and sprouted beans which are always stored in the fridge, plus he picked some tomatoes, sweet peas, and chives from the garden.
But today I wanted to share my creation so I added some noodles, fresh ginger lemon juice, tomato paste salt black pepper, mustard oil, and homemade mushroom sauce and I took over the kitchen. and started making dinner

2 carrots.
10 button mushrooms
2 handfuls sweet peas, some I chopped, and some saved whole pods.
2 small onions
6 cherry tomatoes from the garden
1/2 cup sprouted beans
3 florets of cauliflower.
some chives
2 cm fresh ginger
2 tsp mustard oil
2 tsp mushroom sauce
1 tsp lime juice
1 tbsp tomato puree
1 tsp salt
1 fresh red hot chili
4 garlic cloves.
1/2 tsp black pepper.
2 blocks of instant noodles.

Chopped all vegetables.

Heated an iron skillet. added 2 tsp mustard oil.

added sliced onion,
sliced garlic chili halves, ginger juliennes.
stirred for 2 minutes to get the onion softer.

Added all sliced vegetables
cauliflower, sweet peas, chives, and carrots.
Stirred around 2 minutes.

Stirred bean sprouts in with the other vegetables.

Added mushrooms halves and stirred until mushrooms released water.

Added tomato paste/puree, and then mushroom sauce. stirred well.

!/2 cup water and covered and lowered the heat.

Meanwhile, 2 blocks of noodles dropped into boiling water.
Drained water using a strainer and cut them into small pieces with scissors.

Mixed noodles in with the cooked vegetables.

In the small skillet stirred the peapods using 1 tsp olive oil. Added carrot slices and half-cooked them together keeping their crunchiness
