Hello, dear plant power community greetings 馃檹. here is my plant-based avocado pie I tried for the first time. Thank you plantpowerhive@plantpowerhive and@sirenahippie for giving me an opportunity to participate in Meatless Monday.

My avocado pie.

The ingredients:
3 avocadoes
2 small limes
1/3 cup desiccated coconut
150 grams almonds
150 grams cashews
70 grams dates stone removed
1+ 1 tsp vanilla extract
20 grams jaggery
1/2 cup coconut milk
1/3 cup sugar can use dates 40 grams but the green color will turn brown
1/4 cup tahini
2 tbsp corn starch
2 pinches of salt
1 tsp lime zest
1/3 cup of coconut oil
10 mint leaves.

Making pie bottom
in the food processor put cashews, almonds, coconut, and 1tsp vanilla essence. Add coconut milk, and a pinch of salt, and blend until getting a dough-like mixture. Oil the pan and press the dough to make the pie bottom.

It looks like 馃憜 keep this pan in the fridge for 10-15 minutes.

Now making the filling

Cut and take away the stone from the avocado. scoop it into the mixer along with sugar, mint leaves, coconut oil, tahini, corn starch, vanilla, and a pinch of salt.

squeeze the juice of 1 lime juice (i used 2 because there wasn't much juice) and blend it to smooth puree. pour into the pie bottom.

sprinkle some coconut on it and put back in the fridge for more than 4-5 hours,

The pie is ready.

Enjoy a nice vegan dessert. I was very curious to taste it so before it was set I tried to cut it, but do not hurry to cut the pieces. but after 5 hours in the fridge, it firms up very nicely.
