Pie weather has begun. Chicken and mushroom pot pies. Actually, truth be told, they were mushroom and chicken.
Thanks also to those balmy, late summer nights, the garden gave us a bunch of brilliantly delicious amakhowe mushrooms.
Usually, and in winter, when we have a chicken roast, I make gravy. When we did this chicken on the Weber, it was still summer. In a matter of days, she was rudely blasted away.
I still had two relatively large ones so I decided to make a mushroom and onion bechamel base for the leftover chicken filling. With some white wine for good measure.
For the side, a simple warm courgette and capsicum salad: lightly sautéed in olive oil and dressed with a squeeze of fresh lemon juice.
Comfort food. On a Tuesday on a Monday.
