I got them properly right last night: flour tortilla. It's been a goal - since Cinco de Mayo 2020 and last night, I think I got them if not quite - almost - perfect. Soft, pliable and just tasty. Nothing cruchy and cracked about them.
To fill them, left over chicken, chopped with some cumin and chilli jam. Because I didn't have sour cream, I added cottage cheese and a little tzatziki.
The quick salsa was corn, chopped peppers and tomato. With no coriander, I substituted finely chopped basil. Oh, and there was also freshly picked garden lettuce.
It always takes practise - and paying attention. Not sure about the latter last night, but there must have been enough! 🤣
And, in answer to the question, is it a sandwich? You tell me!
