It's been a while I have contemplated a daily grind. It sounds awful, but it's not. That I have full days with real work. It's work that's valued, and if I am not being paid for it, is contributing to something meaningful.
It all comes with its own frustrations. That's not bad, it's just reality. I am so enjoying having to structure my day to get through everything and mostly I do.
I am glad to get to the kitchen, tired and with a sense of accomplishment.
That was Tuesday. I am grateful.
Tuesday is often a what's-in-the-fridge supper. Last night it was leftover roast chicken, brinjal, carrots, peppers and that stalk salad - remember that? - that became a stir fry in a littleolive and sesame oils. I meant to take a pic when I started, but was distracted by the next week's meal and market planning and shopping lists.
It was pulled together with fresh ginger, garlic, fish sauce and finished off with the juice of a naartjie. With a helping of basmati rice, it was a good end to a long day at my desk.
Until next time, be well
