Shakshouka - Israeli Breakfast

I saw this recipe in on a news website (yes, strange, isn't it?), and I thought it worth to try it out, but obviously not for breakfast. My breakfast is oatmeal or muesli with yogurt.

Ethnic food is always intriguing, you may never know what you get and that's why you have to try it. Now I'm not an inexperienced cook, have a good few years spent in the kitchen cooking and baking, and looking at the ingredients I kind of knew what I get, as we have a similar traditional stew in Transylvania, but not with eggs.

Shakshouka (Arabic: شكشوكة‎, also spelled shakshuka or chakchouka) is a dish of eggs poached in a sauce of tomatoes, olive oil, peppers, onion and garlic, and commonly spiced with cumin, paprika, cayenne pepper, and nutmeg. The dish has existed in Mediterranean cultures for centuries. source

Ingredients

  • 1 red pepper (mine is half red, half green),
  • 1 medium onion,
  • 2 cloves garlic,
  • 800 ml tomato cubes,
  • salt,
  • pepper,
  • 1 bay leaf,
  • 4 eggs.

Method

Heat the oil in a pan, add the chopped pepper, onion and garlic, cook till the onion and pepper is soft. make sure not to burn the onion. Add tomato, salt, pepper, bay leaf and cook for 15 - 20 minutes under a lid.

Add the eggs, cover and cook for about 3 - 4 minutes. They say the yolk stay tender.

Serve with toast.

I can assure you, it's heavenly good, worth a try.
