They are really easy to make and they aren't going in the oven either. It's only a few ingredients too. I got the recipe from Det Søte Liv.
melting the coconut fat. I always use a pan with a little bit of water, and put a metal bowl in the bowling water, and then melt it. That's because it won't burn, and it doesn't destroy the mix between the coconut fat and chocolate.
After the coconut fat have melted you put your chocolate in it too.
While the chocolate is melting you mix the egg and powdered sugar with a handmixer until its a little bit fluffy/airy. It takes round 5 minutes.
After you are done mixing the egg and powered sugar, add it to the melted chocolate and coconut fat, and stirr it easily together. Add also the strong coffee.
Then add the puffed rice in the mix and make small portions in the cupcake liners. Let them cool down in the fridge or somewhere cold before you put them in a cookie jar or a sealed box.
I think these are going to be eaten up really fast before xmas. My mom also told me to make more and bring home for her. So I guess I have to make more this weekend!
