Ingredients

🍚 1 cup of maash (mung bean)
🍚 1 cup of basmati rice
💧 4 cups of water
🛢️ 1/4 cup of oil
🥄 1 tablespoon of chicken bouillon
🧂 1 teaspoon of salt
🌶️ 1 teaspoon of black pepper
🌿 1 teaspoon of cumin

For the onion topping:
🧅 1 large onion, sliced
🛢️ 3 tablespoons of oil


Instructions

1- Prepare Mung Beans:

  • Rinse the mung beans thoroughly under cold water.
  • Place them in a pot, add 4 cups of water, and bring to a boil.
  • Boil for about 25 minutes until they are slightly soft but not fully cooked.

2- Prepare Rice:

  • While the mung beans are cooking, wash the basmati rice until the water runs clear to remove any excess starch.
  • Soak the rice in clean water for 15-20 minutes, then drain.

3- Cook Mung Bean and Rice Pilaf:

  • Once the mung beans have boiled for 25 minutes, add 1/4 cup of oil to the pot.
  • Stir in the soaked and drained basmati rice.
  • Season with chicken bouillon, salt, black pepper, and cumin. Mix well.
  • Cover the pot and allow the water to evaporate. Once reduced, lower the heat.
  • Cover and cook on low for another 20 minutes, allowing the flavors to meld and the rice to absorb the remaining liquid.

4- Prepare Onion Topping:

  • Heat 3 tablespoons of oil in a frying pan.
  • Add the sliced onion and cook until golden brown but not too crispy.

5- Serve:

  • Once the pilaf is ready, serve it on a platter.
  • Top with the fried onions for an added layer of flavor and texture.
