Hello, friends! I hope you are having a great family Sunday. Today I am excited to share with you a wonderful recipe for orange tartlet. This excitement arises because tomorrow I have to present a recipe that each student has created in the baking and pastry course that I have been taking in the last few weeks. We are reaching the end of the first level and I dared to prepare these delicious tartlets filled with an exquisite orange cream, decorated with orange segments and orange zest.
Ingredients:
250 grams of all-purpose wheat flour
30 grams of vegetable shortening
112 grams of powdered sugar
1 egg
1 pinch of baking powder
1/2 teaspoon of orange essence
For the filling we will use orange cream
2 tablespoons butter
6 tablespoons sugar
1 egg
juice of 1 orange
1 tablespoon cornstarch
𝐏𝐫𝐞𝐩𝐚𝐫𝐚𝐭𝐢𝐨𝐧: 𝕊𝕖𝕡𝕥 𝕓𝕪 𝕤𝕥𝕖𝕡:
To begin, place the wheat flour and baking powder in a bowl and stir, then add the vegetable shortening, powdered sugar, egg and orange essence, using a spoon to mix until all the ingredients are well integrated. Avoid touching the dough with your hands, then wrap it in plastic wrap and transfer to the refrigerator.
While our dough is cooling, we proceed to prepare our orange cream. To do this, we use a manual juicer and extract the orange juice.
We break the egg into a container, thus confirming that it is in optimal conditions for its use.
Add the egg, butter and sugar in a saucepan.
Add the orange juice and stir constantly for approximately 5 minutes, or until we see that our cream begins to thicken and form bubbles. At this point, remove the mixture from the heat, place plastic wrap over it so that it does not form a crust and let it cool to room temperature. Set aside.
After removing the dough from the refrigerator, we stretch it with a rolling pin and use molds to cut our tartlets, we open some holes in the center. Then, transfer to the preheated oven at 140 degrees Celsius and bake for approximately 15 minutes or until you see that our tartlets are browning.
Once the time has elapsed, remove the tartlets from the oven and let them cool. Then, unmold them and fill them with the orange cream.
Decorate the tartlets with orange segments and zest.
