Tapioca biriyani is made with tapioca and beef rib bones. This dish is one of my favourite and is the main food of Christian families in ''Kottayam" a part of Kerala.
This dish is a must try dish. This is very special in Christian marriages. This dish has variety of names . It varies from place to place .
Preparation time - 45 minutes
Ingredients:
• Tapioca 1 kg
• Beef with bone - 1. 5 kg
• turmeric powder 1/2 two
• Garlic - 2
• Onions - Three medium sized ( sliced)
• Coconut oil - 3 TSP
• Green chillies - 8 pieces
• Chilly power - 2 TSP
• Coriander powder - 1.5 psp
• Pepper powder 1 psp
• Garam masala powder 2 psp
• Ginger and garlic paste 1/4 cup
• Mustard seeds - 1/2 psp
• Curry leaves - 3 twig
• Coconut - half
• Cumin seeds - 1/2 TSP
• Salt - according to your preference
Process of making
:
1. Cut the tapioca into small pieces and wash nicely in a suitable vessel.
2. Cook tapioca by adding salt and turmeric powder in a pressure cooker untill it becomes soft. ( Water level should be above tapioca)
3. When it is fully cooked, filter water completely and keep it aside.
4. Grind coconut by adding garlic, turmeric powder, green chillies and shallots together. Once it is grunted , mix with cooked tapioca and keep in airtight container.
5. Cut beef into small pieces and keep in a pressure cooker. Now , add garlic ginger paste and mix well. Then add meat masala , turmeric powder, coriander powder, chilly powder, salt , 2 pieces chilly and curry leaves and keep it for five minutes.
6. Cook meat in the pressure cooker. ( I recommend five whistle)
7. Once it is done , heat oil in a span and splutter Mustard seeds , cumin seeds, curry leaves , chillies & onion slices for seasoning.
8. Add meat in seasoning mix and keep for ten minutes. Keep mixing till gravy it becomes roasted form with less gravy.
9. Finally , mix this beef roast and cooked tapioca in a big vessel.
