Time for another food post! Here's a sampling of tasty dishes we've been making over the past weeks.
The other night we had homemade fries and sweet potato fries, steak, and a salad with the first greens and herbs from the garden for the year- Chard, Kale, Arugula, Dandelion greens and a little Basil and Cilantro. I didn't get a picture of the salad before it got demolished. 😂 We fried the potatoes up in sunflower oil then tossed with salt, pepper, paprika, onion powder, and garlic powder for a little extra flavor. We pan fried the steaks up with garlic, pepper, onion, a sprig of rosemary, and a knob butter. We like our steak medium and these turned out beautifully! Not the healthiest meal but OH SO GOOD.
This one was breakfast the other morning, a flour tortilla wrapped around cheesy scrambled eggs, potatoes, onions, carrots, and crumbled bacon!
Taco bowl from earlier in the week. We made a big batch of taco beef to use for salads and lunches this week. We cook big batches like this when we know we are going to be buys and want something easy and quick for the rest of the week. This has ground beef, black beans, red kidney beans, garlic, onion, sweet corn, peppers, chili powder, cayenne pepper, paprika, tomato powder, and a touch of dried oregano, basil, and cilantro. We added some quinoa, romaine, radish, chopped red onion, chopped red cabbage, and goat cheese with a tortilla on the side!
One of the beauties of making a big batch of taco meat is you can follow it up throughout the week with dishes like this! We added extra corn and tomatoes and cheese on top of these nachos as well as the taco meat from earlier! DELICIOUS.
