Preserving peppers is a great way to enjoy this vegetable all year round. And red peppers are bought in bags in my neighborhood at this time of year. They are prepared in different ways: "Ajvar", "Ljutenka"... and my favorite Boiled peppers.
INGREDIENTS:
- 3kg red peppers
- 6 tbsp fresh parsley, finely chopped
- garlic- 15-20 cloves
COOKING LIQUID:
- 400ml white vinegar 8 or 9% (alcohol vinegar)
- 300ml water
- 150ml oil
- 120gr sugar
- 100gr salt
Prepare 4 jars of 1 liter.
Roast the peppers quite a bit. I do it on an electric grill.
Put liquid to boil.
Put the roasted peppers to cook in that liquid for 10-15 minutes. Part by part.
When the peppers are cooked, put the peppers in a jar and a handful of parsley and a teaspoon of chopped garlic in between. Press well, preferably with a wooden spoon. When the jar is full, put more parsley and garlic on top and seal well.
Finally, put the jars in the oven at a temperature of about 100 degrees Celsius and let them pasteurize.
When you turn off the oven after one hour, do not remove them until they have cooled inside.
