A delicious vegetable—we call it auyama here, though it is also known as zapallo or calabaza (pumpkin/squash). It is rich in vitamin A, low in calories, and has a slightly sweet flavor. It is ideal for people with sensitive stomachs; the flesh, skin, and seeds are all edible (except for the hard-skinned variety), and it cooks quickly.
