Greetings lovers of cooking and good food, as I told you in my previous publication, I recently bought a beef tenderloin and divided the piece into 4 different cuts, precisely to make four different meals; this time one of the pieces of about 500 gr whole, I used it to open it and be able to stuff it, and thus take advantage of the goodness and softness of a meat like the tenderloin.
Remember that the tenderloin as a piece of meat is a muscle with a low fat concentration, and since it is not one of the parts of the animal that contracts with natural movement, it retains a lot of softness, unlike other parts that harden as any other muscle would do when contracting. That is why this meat is ideal for preparing stuffed recipes, or any other recipe where the meat is used in large cuts.

- 100 grams of cooked ham
- 1 tablespoon soy sauce
- 1 tablespoon oyster sauce

The first thing to do is to take the piece of tenderloin and little by little open it, in my case the piece measures about 30 cm in length, which is enough for me to be able to work it comfortably. Something that I invite you to do is to lose the fear of cutting the meat, it is true that doing it properly helps to keep the meat juicier, however, little by little we are improving the technique and we stop depending on some butcher to do the job for us.
In order to open a piece of meat like this, the first thing to do is to place the knife parallel to the board and close to it, pressing with our other hand on the top of the meat and little by little cut until you reach the end and then extend it. It is possible that at some point you will tilt the knife more on one side than the other, but this is something that you will solve by rolling it back up, because you will cover it.
The next step is to cut the vegetables in the shape of our preference, in my case I preferred to do it in strips. Then incorporate them in a frying pan to sauté them with a little oil, adding the tablespoon of soy sauce and the oyster sauce, as well as the garlic, salt and pepper. The cooking time varies depending on how soft or crunchy we want to leave the vegetables, knowing that they will also receive cooking when baked.
Once the vegetables are ready we proceed to place the stuffing on the tenderloin, first, placing salt, a little soy sauce and perhaps mustard on the meat, then place the ham with the cheese and finish with the vegetables. Once rolled up, we can hold it with chopsticks or tie it up, in my case I used aluminum foil, but I made the mistake of not sealing it first so that the meat would not lose so much of its juices.
This piece of meat, due to its size, not being very large, I baked it for only 30 minutes, enough time for it to be well cooked inside, and even though I did not seal it, I kept a lot of the juices, however, since I did not tie it before cooking it, when I tried to cut it, it fell apart due to the softness of the meat.
It only remained to prepare a side dish, so I took a cauliflower and broccoli and steamed them, and then put salt and lemon instead of vinegar, that's how my son likes it, I also prepared some rice in the same pan where I sautéed the vegetables to take advantage of the flavor that was impregnated, ending up with a succulent and in my opinion balanced dish.
