Ingredients

Instructions

1- Prepare the Salsa Verde:

3- Prepare the Tortillas:

  • Heat oil in a non-stick griddle or skillet over medium heat. Fry each corn tortilla briefly on both sides until soft. Place them on a plate, ready to fill.

4- Make the Filling:

  • In a mixing bowl, combine the shredded chicken, cottage cheese, and 1 cup of shredded Oaxaca cheese. Mix well.

5- Assemble the Enchiladas:

  • Fill each fried tortilla with the chicken and cheese mixture. Roll them up tightly and position them seam-side down in a white rectangular ceramic oven-safe dish.
