Soup Base:
1 tbsp red Thai curry paste
1 packet of noodles
150ml plant-based cream
1 punnet of mushrooms (about 200-250g)
1 bunch of pak choy (roughly chopped)
3 cloves garlic (minced)
1 stock cube
1 cup water

Prepare the Vegetables:
Cook the Soup Base:
Heat oil in a medium-sized pot. Fry the garlic, pak choy, and mushrooms for about 5 minutes until fragrant and slightly softened.
Add the red Thai curry paste and stir to coat the vegetables evenly.
Simmer the Soup:
Add the stock cube, 1 cup of water, and plant-based cream to the pot.
Bring the mixture to a boil, then reduce the heat to a simmer. Cover and let it cook for 10 minutes.
Prepare the Gyoza:
While the soup is simmering, heat oil in a skillet over medium heat.
Fry the gyoza until their bottoms are crispy and golden.
Add a splash of water, cover, and cook for an additional 3-4 minutes until the water evaporates and the gyoza are heated through.
