Sundays always feel a bit special, don't they? I like to start mine with a cup of tea and think about what I can make for my girls that's both good for them and yummy. The goal is to avoid any breakfast boredom! That's when I thought of veggie pancakes โ a family favorite. hereโs a super easy recipe that you can whip up in no time. Itโs packed with veggies and flavorโperfect for mornings when you want something wholesome yet tasty.healthy pancakes are my family favorite breakfast. 1 cup semolina (suji)
1 cup gram flour (besan)
1 cup whole wheat flour (atta)
Water
1 cup grated carrot
1 large onion, chopped
1 capsicum, chopped
Fresh coriander, chopped
1/2 tsp black pepper powder
1/2 tsp chili flakes
1/2 tsp carom seeds (ajwain)
Salt to taste

๐Firstly, In a bowl, mix suji, besan, and atta. Add water to make a thin batter and let it rest for 20 minutes (suji absorbs water and thickens the mix).
๐ After resting, add grated carrot, chopped onion, capsicum, and coriander.
๐ Mix in pepper, chili flakes, ajwain, and salt.
๐ Heat a pan or tawa, pour one ladle of batter, and spread it like a pancake.
๐ Cook on one side until golden, flip, and cook the other side.
๐ Serve hot with the green chatni.

Using the same batter, I also prepare a special treat for my daughterโhealthy cheesy balls made in an appe maker. Kids usually love anything with cheese, so this is my little trick to add extra nutrition to her meal without complaints.
Ingredients
The same pancake batter
Cheese cubes or grated cheese
Baking soda 1/4 tsp

๐งBefore making the pancakes, keep aside half of the batter. Now add ยผ teaspoons of baking soda to it.
๐งHeat the appe maker and lightly grease each cavity with oil.
๐ง Pour a spoonful of batter into each cavity.
๐ง Add a small cube of cheese in the center.
๐ง Cover it with a little more batter so the cheese stays inside.
๐ง Cook on low-medium flame, turning occasionally, until the balls are golden and crisp on all sides.
๐ง Serve them with ketchup or chutney, and watch them disappear in minutes.
๐งWhen my daughter takes a bite and the cheese melts out, the smile on her face is the biggest reward for me. ๐งโค๏ธ
