Sundays are always a great time to experiment with new recipes, and this time, I decided to surprise my little daughter with something unique. She loves pizza, but I wanted to make sure she eats something healthy too. So, I turned nutritious bajra (pearl millet) pancakes into a pizza-style delight! The result? She absolutely loved it and finished it in no time!
Easy Recipe for Bajra Pizza-Style Pancakes

Bajra flour (Pearl millet flour) - 1 1/2 cup
Semolina (Suji) - 3/4 cup
Gram flour (Besan) - 1 cup
Finely chopped spinach - 250 g
Onion - 1 finely chopped
Carom seeds (Ajwain), cumin powder, red chili powder, garam masala and turmeric powder -1/2 tsp each
White sesame - 2 tsp
Oil as required
salt โ As per taste
Water โ As required
(Oregano , cheese, capsicum . Carrot ,onion)

๐ In a mixing bowl, combine bajra flour, semolina, and gram flour.
๐ Add chopped onion and then add greated carrot and mix well
๐ Add carom seeds, cumin powder, red chili powder, garam masala ,turmeric powder and salt. Mix well.
๐Add finely chopped spinach and gradually add water to make a smooth batter. Let it rest for 15-20 minutes so the semolina absorbs the water and thickens the batter.
๐ After 20 minutes, adjust the consistency by adding a little water if needed.
๐ Heat a non-stick pan and lightly grease it with oil.Pour a ladleful of batter onto the pan and spread it into a round shape.
๐ When one side turns golden brown, flip the pancake . Lower the flame, add mixed vegetables, cheese, and oregano on top of the pancake.
๐ Cover with a lid and let it cook until the cheese melts.
๐ Your healthy and delicious bajra pizza-style pancake is ready!
You can also enjoy it without cheese by simply cooking both sides and serving it as a traditional pancake. It still tastes amazing!
Bajra pancakes are perfect for winter, as they are light, nutritious, and packed with warmth. They make a great breakfast or evening snack option. My daughter loved this healthy twist on pizza, and I was happy knowing she ate something nutritious!
