Summary of Recipe

Cook Time - 20 minutes
Cooking Difficulty - Easy
Type - Vegan
Servings Yield - 2-3 people as side or 1 person as a meal

Ingredients

  • Kale - 1 bunch
  • Broccoli - 1-2 heads, chopped
  • Onions - 2 finely diced
  • Garlic - 4-5 minced gloves
  • Carrots - 3-5 chopped
  • Avocado Oil
  • Olive Oil
  • Salt and Pepper

Preparation

Step 1

Start this recipe off by prepping all ingredients and chopping them up. You can cut the veggies and garlic to your satisfaction. While doing this have a pot of boiling water going and add salt to prepare for blanching the broccoli and kale.

Step 2

Once the pot of water comes to a boil begin by adding the broccoli for one to two minutes. At the same time, add about 3 tablespoons avocado oil to your sauté pan on medium-high heat and add your chopped onions.

Step 3

The next item you will blanch is your kale, now go ahead and add the kale with the broccoli for 30 seconds to 1 minute.

Step 4

After cooking the onions for about 4 minutes, add your carrots and sauté for another 3-4 minutes.

Step 5

Strain your now blanched kale and broccoli

Step 6

Add in garlic with the now cooked carrots and onions for 30 seconds.

Step 7

Now we're at the homestretch and you will add the blanched broccoli and kale to your saute pan with the rest of the cooked ingredients. Then you'll add about 2-3 tablespoons of avocado oil, reduce the temperature to medium / low-medium heat, add salt and pepper to taste.

Step 8

Cover the pan with a lid and cook for about 8-9 minutes, stirring occasionally (about every 2 minutes).

Now it's time to eat!

There you have it, now it's ready to serve. This can either be a good side dish to your main entrée and will serve about 2-3 people, otherwise it's a great vegan meal for one person.

If you have children it's probably not the most friendly meal. I know my son who is two years old would never even try this, though I continue to make the attempt, he'd rather eat more basic foods.

This is a very delicious meal though if these steps are followed properly. One of the benefits of blanching the broccoli and kale is that it helps to extract the nutrients and bring out their natural enzymes that make it more digestible and more tasty.

Another thing you can do to enhance the meal is chopping the broccoli and garlic so that they sit for about 15 minutes prior to cooking with them. If you do this, especially with garlic, the taste will be even more potent. For garlic, this helps bring out it's natural enzyme allicin which is what really is the beneficial part of garlic that you'd read about online or in health journals when it comes to their immune properties.

Let me know if you plan on giving this meal a try. Lately, this dish has been a regular part of the dishes I've been rotating in my diet because I've been trying to minimize how much meat I eat.

That's all folks, hope you enjoy the dish!
