This is an interesting beer. Exaptation is a Spontaneous Amber Ale aged in Norden Aquavit Barrels. I had no idea what Norden Aquavit barrels were so don’t worry if you have not heard of them.

NORDEN AQUAVIT is a traditional Scandinavian-style botanical spirit brought to life through innovation and exceptional craftsmanship. With an emphasis on producing locally from organic and wild-crafted (foraged) ingredients, the base spirit, made from 100% certified organic corn grown in the midwestern United States, is blended with pristinely filtered water and hand-prepared botanicals. Distilled in the increasingly vibrant craft-distillation scene of Michigan, our artful approach relies upon no additional extracts, additives, or flavorings of any kind.

This old world inspired spontaneous amber ale aged first for 1.5 years in a foeder which has become a favor style of mine and then for 8 months in three Norden Aquavit barrels. The final product is a complex wild amber ale with layers of nordic botanicals and a slightly savory finish which is unique for beer.

As you can see the color is a Harvey complex amber with loads of redish undertones. The flavor is funky with sour, berry, oak and other dark fruits and malts. The aroma is slightly sweet, but earthy which is where all that savory funk comes into play.

After enjoying this treat we decided to take en evening drive and a walk down the beach. There’s something so satisfying about a great beer and a little nature.

I’m trying to take time to relax and enjoy life as we all get caught up in our jobs, responsibilities and everyday life. We all need to treat ourselves and take time for life.
