Hi Everyone,
Today I made a simple, delicious and somewhat healthy meal: a cross between a chicken stew and a stirfry. This is a one pot meal but you can always warm up some flatbread or make some rice if you wish. It can also be made healthier if you bake the chicken but that complicates things. It should be made to your taste, it's scalable and takes about 40 minutes-the best thing is there are very few dishes.
Must have Ingredients:
Chicken Breast, Onions, Salt, Oil.
Other Ingredients, non-essential but today I used:
Garlic, Mini-Peppers, Mixed-Frozen Veggies (saves time), Soul seasoning (similar to allspice), pepper, paprika, fresh basil, lime juice, Italiano seasoning, ginger, crushed chili peppers, turmeric, coriander, cumin and a some hot sauce.
Directions:
- Put some oil in a large pan on medium heat
- Add the entire chicken breast
- Add chopped onions after you sear each side of the breast
- Add peppers, garlic, mushrooms and whatever else needs longer to cook, cover
- Remove chicken, after about 20 minutes or so, turn down the heat, cube the chicken
- Add the chicken back, add spices, add anything that doesn't need long to cook and spices, turn the heat back up
- Stir, cover, wait and serve
Between adding stuff and stirring you can chop the vegetables, set the table and clean to save time. You also don't have to use chicken breast and can substitute anything, ensure it's not undercooked or dry. You can also add water, stock, flour etc. to make it into a stew. I've added potatoes but you should boil them first along with any other roots. Sometimes I cook rice to eat it over and often have flatbread with it.
