I'd like to share one of the dishes my husband cooks for lunch: Fried Fish with Veggies. He usually prepared this for the midday meal because of the vegetables; it's delicious to sip on the broth, which is packed with nutrients from the veggies —hehe. And since there are only three of us at home, me my husband and our baby. there are often leftovers that we can simply reheat. It would be a waste to just throw the food away, after all.
ingredients;
- Fried Fish (any kinds of fish)
- Mung beans
- Pumpkin
- Sponge guard
- Egg plant
- Bitter melon
- Amaranth leaves
- Onion, garlic, ginger, tomato.
Preparation.
My husband left early to buy this fish—known as galunggong—and it is one of the largest ones I've ever seen. He cleaned it first, removing the scales and entrails, and then washed it.
Then, he sliced it and sprinkled it with salt. He managed to get seven slices out of the fish 😅—we won't be able finish it all in one sitting once it's cooked. Hehe.
Afterwards, he fried them first for later and set aside a few slices to eat dipped in soy sauce and vinegar. 😋
After frying all the fish, he proceeded to boil the mung beans. In his recipe, it is better to boil the mung beans first until they soften, then set them aside.
Lets start cooking.
He placed the clean pan back on the fire and heated a little oil. He sautéed the garlic, onion, tomato, and ginger, then added the boiled mung beans and squash. He seasoned the dish with salt and Knorr, then added just the right amount of broth.
Wait for it to boil and add the bitter melon; then wait 3 minutes and add the eggplant as well.
Wait another 3-5 minutes, then add the sponge guard and amaranth leaves.
Taste it and adjust the seasoning again. It is ready to serve.
I enjoy the flavorful broth, which is made with mung beans and fried fish, as well as the slightly sweet flavor of the fresh vegetables. Have you tried this before?
