Changing my diet wasn’t too difficult. It was just a matter of eliminating meat. Don’t get me wrong. I do like meat, especially lamb. Before I became a pescatarian, my wish for my last meal before I die was lamb 😅 Now, it’s probably vegetarian curry (unless I find something else) with lots of santan (coconut milk). I just love curries with coconut milk 😋

I’m very simple. I just need a spicy vegetable dish and I’m okay. But because reconstitution@reconstitution became a pescatarian together with me I had to come up with recipes that would keep him going!

I used to cook fried wanton with mince pork filing. It was one of the more popular dishes during family gatherings and I wanted to replicate that into a vegetarian dish.

I’d learned from YouTube to use firm tofu to replace mince meat and that’s what I did. I’d also learned to use cauliflower to replace chicken so I decided to use these two ingredients. Instructions below 👇🏻

Ingredients:

Wanton skin, cauliflower, firm tofu, carrot, onion, garlic, salt, soy sauce, oyster sauce, white pepper.

Method:

1 . Cut the cauliflower into florets and steam or microwave at high for three minutes.

2 . Cut the steamed cauliflower to fine pieces.

3 . Cut some carrot and firm tofu into small cubes. Mince a small onion and some garlic.

4 . Saute the garlic and onion in some coconut oil.

5 . Add the carrots, tofu and cauliflower.

6 . Add some salt, soy sauce, oyster sauce and white pepper, to taste.

7 . Use a little water to wet the edges of the wanton skin.

8 . Put filling in the centre and press edges together to seal.

9 . Deep fry till golden brown.

Just the thought that something is “vegetarian” turns some people off. They really have to open their minds because vegetarian food can be very delicious, if cooked right. These fried wantons are really yummy. My family loves it. Give it a try and let me know what you think 😊
