I know I haven't even shared my recipes from my Christmas Roasts yet, but I just can't stop thinking about Aime and the fact that our little girl is going to be turning 18 in just two months.

Aime and I spoke about it briefly, and she mentioned she would like a moon themed cake, and of course my mind has been racing with ideas ever since.

The first thing I knew is that I wanted to create an illustration or model of Aime swinging from the moon and looking out of a telescope at the great beyond.

I have been toying with ideas of vanilla, buttercream and fondant and so any other options, but I believe it will be a combination of these elements that will help me bring Aime's cake to life.

I also have to be careful as February is still a very hot month here in South Africa, so deciding on fondant (which you are not supposed to refridgerate) and buttercream (which will melt so easily in this weather) it will be a tough tightrope to walk.

I think last year's obsession with red velvet will carry through into 2026 but with blue velvet instead.

At least I have decided that part!

The rest I am still unsure of. I will certainly be using elements of the cakes below, but Aime's cake will be as unique as she is, bringing in an element of magic and "Alice Through The Looking Glass."

I will probably also be taking my lace mats out for the first time to cover the bottom/ centre of the cake.

I am keen on using fondant as a base to work with as it will help me keep lines smooth and edges neat and sharp and will show up the decorations more prominently, especially the model of Aime and her swing, which I have still not decided whether will be 2D or 3D.

What ever I decide, it will be a special cake for a special girl <3!
