Homemade eclairs with vanilla cream are a real culinary delight that can impress any guest or family member. These sweet delights combine a crispy crust and a soft, creamy filling that melts in your mouth. Here is a detailed recipe that will help you prepare these delicious desserts at home.

Ingredients:
For the dough:
1 cup water
80 g butter
A pinch of salt
1 cup flour
4 eggs
For the vanilla cream:
500 ml fresh milk
2 egg yolks
1/2 cup sugar
3 tablespoons cornstarch
1 packet vanilla sugar
50 g butter
For the glaze:
200 g chocolate (milk or dark, of your choice)
50 ml cream

Preparing the steamed dough:
Preheat the oven to 200°C and prepare a baking tray by lining it with baking paper. Place the water, butter and a pinch of salt in a saucepan. Bring to a boil over medium-high heat. When the butter has melted and the mixture starts to boil, add the flour all at once and quickly stir with a wooden spoon until a smooth dough forms that pulls away from the sides of the pan. Remove the pan from the heat and let the dough cool slightly. Add the eggs one at a time, beating well after each addition until you have a smooth and homogeneous mixture. Transfer the dough to a piping bag with a round tip or use two spoons to form small balls onto the prepared tray. Leave enough space between them as they will expand during baking. Bake the eclairs for about 20-25 minutes or until golden and firm. Then reduce the oven temperature to 160°C and continue baking for another 10-15 minutes to dry out the inside. Turn off the oven and leave the eclairs in for another 10 minutes to prevent them from falling suddenly. Then take them out and let them cool completely.

Prepare the vanilla cream:
In a bowl, beat the egg yolks with the sugar until light and fluffy. In another saucepan, heat the milk with the vanilla sugar until it starts to boil. Gradually add the hot milk to the egg yolk mixture, stirring constantly to prevent the eggs from curdling. Return the mixture to the saucepan and add the cornstarch. Cook over low heat, stirring constantly, until the cream thickens. Remove the saucepan from the heat and add the butter, stirring until it melts and is well mixed with the cream. Let the cream cool, covering it with cling film to prevent a skin from forming.

Filling the eclairs:
Make a small cut in the bottom of each eclair and carefully squeeze a small amount of cream inside using a syringe or spoon. Let the eclairs cool completely before moving on to the glaze.
Preparing the glaze:
Melt the chocolate in a water bath or in the microwave, being careful not to burn it. Add the cream to the melted chocolate and mix well until you get a smooth and shiny glaze. Dip the top of each eclair in the glaze and let it set on a wire rack or baking paper. Your homemade eclairs with vanilla cream are ready! You can serve them immediately or store them in the refrigerator until serving time. Enjoy this delicious dessert with a cup of coffee or tea!
