-1 1/2 large, ripe plantains (use two if they are small).
-3 medium eggs.
-2 tablespoons unsweetened cocoa powder.
-1 tablespoon baking powder.
-2 tablespoons granulated panela (unrefined cane sugar), optional.
-1/2 teaspoon salt.
-2 tablespoons chocolate chips, optional.
-Pan: 20 cm in diameter.
Preheat the oven to 180 degrees Celsius (350 degrees Fahrenheit).
Encendemos el horno a 180 grados.
We start by chopping the plantain, we cut it into slices and each slice we cut into 4 parts, we do it this way so that it blends more easily.
We put the plantain in the blender and add the other ingredients: the three eggs, the granulated panela, the baking powder, and the salt.
Now blend everything very well; you should have a homogeneous mixture. At this step, it is advisable to pause so that the ingredients integrate well and the blender is not damaged.
Then we pour this mixture into the chosen mold, which should be previously greased and floured, and set aside approximately 1/3 of the mixture to mix with the cocoa.
In a separate bowl, pour the mixture we set aside and add two tablespoons of cocoa, mixing very well with a hand whisk.
Now we pour this cocoa mixture over the mixture in the mold, and add the chocolate chips. This step is optional, but it tastes great.
Bake in the oven for approximately 25 to 30 minutes or until a skewer inserted into the center comes out clean.
Let it cool slightly before unmolding.
We cut a piece and enjoyed it! 馃構
