Today we're going to prepare a very special recipe, ideal for a complete lunch, and I think you'll impress your guests 👌
I usually use bell peppers to season a recipe or for salads, this time they will be the star along with the filling we are going to prepare. In this case, I have used ground beef, seasoning it to my liking, and this is fantastic because here we don't have to follow the exact quantities of the ingredients we are going to use, and they can vary according to each person's taste.

-2 large bell peppers.
-300 grams of ground beef, use your preferred cut.
-2 scallions.
-3 cloves of garlic.
-1 small onion.
-1 large ripe tomato.
-1 tablespoon of tomato paste.
-Fresh oregano, to taste.
-Salt and black pepper, to taste.
-Mature cheese, such as Parmesan or a blend of cheeses.
-Approximately 4 tablespoons of extra virgin olive oil.
-1 tablespoon of butter.
-Stuffed olives, to taste.
-2 pimentones grandes.

-3 ajos.
-1 cebolla pequeña.
-1 tomate maduro grande.
-1 cucharada de pasta de tomate.
-oregano fresco, al gusto.
-sal y pimienta negra, al gusto.
-queso madurado, puede ser parmesano o una mezcla de varios quesos.
-4 cucharadas aproximadas de aceite de oliva extra virgen.
-1 cucharada de mantequilla.
-aceitunas rellenas, al gusto.
Before you begin, remember to wash all the vegetables you'll be using very well.
Antes de comenzar recuerda lavar muy bien todos los vegetales que se van a usar.
We start by chopping the seasonings: the onion, the garlic, and the scallion. In that order, we will sauté them in a pot with two tablespoons of olive oil and one tablespoon of butter. We sauté it over low heat, making sure it doesn't burn.
Once the seasonings are sautéed, we will add the meat, a few oregano leaves, salt and pepper to taste.
Stir well and let the meat cook over medium heat, stirring occasionally, for about 15 minutes.
Now, while the meat is cooking, we'll grate or chop the tomato and olives. You can add whole olives, but I personally like to chop them in half.
We add these two ingredients to the meat, and while we're at it, we add a tablespoon of tomato paste and stir it very well.
We add a touch of Worcestershire sauce, stir again to ensure all the ingredients are well combined, let the meat cook for about 5 more minutes, then turn off the heat and let it cool.
Now comes the fun part, we try to remove the top part of the bell pepper, I call it the little hat hehehe, and we make sure to clean the bell pepper well inside.
Using a spoon, we fill the peppers, add the meat, and the cheese. This cheese is a mixture of three: pecorino, manchego, and parmesan. I've also added a touch of pepper and olive oil, and then I've placed them on the baking tray.
We put them in a preheated oven at 190 degrees, they will be ready when the bell peppers are tender.
