-2 chicken thighs
-1 cup finely diced pineapple
-1/2 cup pineapple juice
-2 cloves garlic
-1/2 white onion
-2 tablespoons granulated panela or regular sugar
-2 tablespoons oil
-1 tablespoon butter
-Salt and pepper to taste
-Hot chili powder, sauce, or fresh (to taste)
-1 tablespoon white vinegar
We begin by seasoning the chicken thighs with salt, pepper, and hot sauce; all of these ingredients are used to your liking.
Empezamos aderezando los muslos con la sal, pimenta y el picante, todos estos ingredientes se usan al gusto de cada uno.
Next, in a frying pan, add the oil and butter. When it's hot, add the thighs and sear them on both sides. Do this over high heat. After this step, remove the thighs and set them aside.
Now in the same pan where we seared the thighs, we're going to add the finely chopped onion and garlic, stir and let it cook over medium heat until the garlic is slightly toasted, be careful, we don't want burnt seasonings.
Then we add the pineapple that we have cut into small cubes, stir and add the half cup of pineapple juice.
Add the tablespoon of vinegar and the two tablespoons of panela or your preferred sweetener, stir well so that all the flavors are incorporated.
Now we cook the chicken thighs again, approximately 15 minutes on both sides over medium-low heat. We will notice how the pineapple juice reduces, leaving us with a concentrated sauce with pieces of pineapple.
We're ready to serve! Enjoy your meal 馃構
