I've been preparing cake recipes that I will create over the weekend and I only had just a little time to prepare lunch. I wished for something fresh, colorful and fast done. I went to my small winter garden to see what I could find. I came back to kitchen with a basket full of joy and vegetables. I decided I will make a fresh salad with sautéed button mushrooms which I bought in the farmers market yesterday.
I cleaned and sliced red, yellow and green paprika and cherry tomatoes. I washed a bowel of lamb's lettuce and mushrooms and dried them with a paper towel. I heated up olive oil in a large pan and cut bigger mushrooms into half or quarters. I cooked them just for a few minutes until they get nicely brown on the sides. I mixed yogurt, white vinegar, garlic, parsley, black pepper and salt.
The salad gave a feeling that spring might be just around the corner. It also gave me loads of energy to finish writing down my new cake recipes. Happy Friday to all!
