Hello Hive Foodies!

Let me share a recipe which is a personal favorite of mine. When I became a wife and a mother there are some recipe I haven't tried cooking before, but this is the moment in your life where you really have to learn and experiment. So yesterday I was able to buy the groceries and was able to buy the needed ingredients for this recipe. But of course as a mom I would still stick to my budget and not buy too much. So this recipe is a budget friendly meal.

I honestly love Pork Menudo, whenever I go to parties or fiesta this is one on my list. So I wanted to make my own, it's not perfect yet but for me it tastes great.

In cooking this recipe I try to prepare a day before, specially the pork you will be using. In my case I try to marinate the pork in soy sauce and lemon first before cooking. So I combine the pork, soy sauce and lemon in a bowl. Mix well and let it stay for at least 1 hour. After I store the bowl inside the refrigerator while you marinate to avoid contamination.

Ingredients

2 pcs. of pork belly sliced
1 cup potatoes diced
1 piece carrot cubed
1 piece onion chopped
3/4 cup tomato sauce
1 cup water
2 tablespoons cooking oil
Salt
Oyster sauce
Tomato paste
Canned baked beans

Let's Cook!!

  • Start with heating the oil in a pan, Saute onion. You may add garlic if you want, but in my case I will be using what is only found in my kitchen.

  • Then you add the marinated pork. Cook for 5 to 7 minutes. You may cover, but since I don't have a cover I will just let it be.

  • I added water to let the pork cook more. Let boil and simmer for 30 minutes to an hour depending on the toughness of the pork. Note: Add water as necessary.

  • I wanted my carrots and potatoes to be a bit soft so I will be adding it now. But if you want it half cook you may add it later. Put-in potatoes, carrots, sugar,salt. I was able to buy this chopped carrots and potatoes for only 36 pesos. So its hassle free and affordable.

  • Pour in tomato sauce and add tomato paste.Stir and cook for 8 to 12 minutes. You may add salt or pepper for taste if you want.
  • Lastly this is just optional, I added a can of baked beans. I just actually experimented if it would make it tastier. And it actually did.
