I wake up early in the morning with a sense of gratitude to the sound of rain on the iron roof. the return of the rain have so many positive aspects to it, the most important of which being breaking the cycle of frost.
as soon as the night sky is overcast, temperatures do not drop anywhere near freezing.
so this too, is wonderful. we have gained overnight about 7 degrees centigrade at night.
the approach of the full moon combined with the clear weather having a strong effect in drying out everything, so again, the rain returning re-establishes the delicate balance improving the conditions both the forest and veggie gardens can thrive in. water reservoirs in the soil are being topped up once again toward the arrival of our loooooong dry season.
our main veggie patch got a nice layer of horse manure yesterday, just before the rain. all these nutrients along with the water will now trickle down into the soil and become available for the roots.
also, the rain forces me to stop (a break from olive pruning !) I can only ritually prepare for rain event prior to them happening.
once they start, I am mainly indoors, finding peace and time to read (haven´t yet gotten to read the book from an author I was recommended by @anttn ), write, cook.
even though it isn´t that cold today, humidity is in the air and hence I got the fire going. since I am inside and with time on my hands, I am preparing a simple, yet delicious meal that I will now share with you.
Lunch is slowly cooking on top of the stove. low heat, over several hours.
knowing what was coming, I last night left some chickpeas in water.
I like to cook with different cabbage and kale leaves.
Mixed in with the Chickpeas and almost ready for cooking.
the only things added are our home grown olive oil, good quality hot Paprika (from just across the border in Spain) and some Himalaya salt.
