Today I am sharing how to prepare a nutritious lunch: boiled ocumo chino (taro root) with paprika-seasoned beef stew. It is simple to make and requires few ingredients. Ocumo chino is one of the most widely cultivated vegetables in Sucre State—specifically on the Paria Peninsula—and is used in fish or beef soups, as well as in a delicious side dish to accompany grilled meats (or any protein you prefer). Hoy comparto cómo preparar un almuerzo nutritivo: ocumo chino (malanga o taro) hervido con un guiso de carne de res sazonado con pimentón. Es una receta sencilla que requiere pocos ingredientes. El ocumo chino es uno de los vegetales más cultivados en el estado Sucre —específicamente en la península de Paria— y se utiliza en sopas de pescado o carne, así como en una deliciosa guarnición para acompañar carnes a la parrilla (o cualquier proteína de su preferencia). PROCEDURE

The first step was to put about 5 liters of water on the stove; once it was boiling, I added the ocumo chino (taro root) and salt, letting it cook for approximately 25 minutes. Since the taro wasn't pre-peeled or frozen, I waited for the water to boil before adding it so it would soften faster.

El primer paso fue poner unos 5 litros de agua al fuego. Una vez que empezó a hervir, añadí el ocumo chino y sal, dejándolo cocinar durante aproximadamente 25 minutos. Utilicé ocumo chino que había sido pelado y congelado previamente; agregarlo cuando el agua ya estaba hirviendo ayudó a que se ablandara más rápido.

The next step was to wash the vegetables and remove the seeds and skin from the bell pepper; I blended the pepper with a cup of water and set it aside.

I placed the chopped cilantro, leek, celery, and chives on the stove and sautéed them over medium heat for 5 minutes to release their juices. Then, I washed and cut the beef and sautéed it for about 5 minutes so it would absorb the flavor of the vegetables.

Afterward, I added the blended bell pepper and the cubed potatoes, along with salt to taste. I let it cook over medium heat for about 25 minutes, adjusted the seasoning, removed it from the heat, and let it cool.
