Since the ingredients are about the same as a Greek farmer's salad I came up with this name myself at some point. "GREEK SALAD SOUP" Especially now at the end of winter, one has more and more desire for vegetables and at the same time it is still the season where the healing effect of a hot soup is good for the body and soul.

The soup is stunningly delicious, VERY nutritious and basically quite easy to make with just a few ingredients:

Cucumber
Peppers

Oregano
Olive oil

I always choose the amount of the three types of vegetables so that there is about the same amount of each and have tried for this recipe also already mozarella and sheep's cheese together, tastes also very very good, a bit spicier it is then by the farmer sheep's cheese. Today, however, just with mozarella.

Wash the vegetables, peel the cucumber and remove the stalk and seeds from the bell pepper. Then cut everything into cubes of approximately the same size.

Heat some olive oil in a pot, sauté the vegetables briefly, then add salt and water. TIP: do not take too much salt, because the taste will be more intense due to the cooking and the mozarella at the end.

Now let everything simmer very lightly for about 15-20 minutes at very low heat without a lid.

After this cooking time simply place the sliced mozarella on the surface of the soup and sprinkle with oregano. DO NOT STIR!
Put the lid on the pot and simmer gently for another 5 minutes.

And the delicious, warming soup is ready. When serving, it's nice to fill the soup into the plates first and drape the cheese on top. If available, it is of course pretty to decorate with fresh herbs, but these are rather scarce here in winter.

Rezept "Griechischer Salat Suppe" glutenfrei

Ich weiß nicht, ob dies der originale Name dieser Suppe ist. Ich habe das Rezept vor Jahren irgendwo gefunden und danach immer wieder einfach so gekocht, wie es sich für mich am besten bewährt hat.

Da die Zutaten in etwa denen eines Griechischen Bauernsalates entsprechen habe ich mir irgendwann diesen Namen selbst ausgedacht. "GRIECHISCHER SALAT SUPPE" Vor allem jetzt zum Ende des Winters hat man ja immer mehr Lust auf Gemüse und gleichzeitig ist es noch die Jahreszeit, wo dem Körper und der Seele die heilsame Wirkung einer heißen Suppe gut tut.

Die Suppe ist umwerfend lecker, SEHR nahrhaft und im Grunde recht einfach zu machen, mit wenigen Zutaten:

Gurke
Paprika
Mozarella
Salz
Oregano
Olivenöl

Die Menge der drei Gemüsesorten wähle ich immer so, dass von jedem in etwa gleich viel ist und habe für dieses Rezept auch schon Mozarella und Schafskäse gemeinsam probiert, schmeckt auch sehr sehr gut, ein bisschen würziger wird es dann durch den Bauernschafskäse. Heute aber einfach nur mit Mozarella.

Wasche das Gemüse, schäle die Gurke und entferne den Strunk und Kerne vom Paprika. Danach alles in ungefähr gleich große Würfel schneiden.

Etwas Olivenöl in einem Topf erhitzen, das Gemüse kurz anbraten, danach salzen und mit Wasser aufgießen. TIP: nicht zu viel Salz nehmen, da der Geschmack durch das Kochen und am Ende den Mozarella noch intensiver wird.

Alles nun ca 15-20 Minuten bei sehr kleiner Hitze ganz leicht ohne Deckel köcheln lassen.

Nach der Kochzeit den in Scheiben geschnittenen Mozarella einfach auf die Oberfläche der Suppe legen und mit Oregano bestreuen. NICHT UMRÜHREN!

Den Deckel auf den Topf und für nochmals ca 5 Minuten ganz leicht köcheln lassen.

Und schon ist die leckere, wärmende Suppe fertig. Beim Anrichten ist es schön, wenn man zuerst die Suppe in die Teller füllt und den Käse nach oben drappiert. Wenn vorhanden ist es natürlich hübsch mit frischen Kräutern zu dekorieren, diese sind hier im Winter aber eher Mangelware.
