I left my job of 13 years, 5 days ago.
So I've been putting in some hours getting myself set up to move onto my next phase. My vision of that phase is a little foggy at present. It was my intent to set myself up, part-time while still bringing in a steady paycheck, to build some passive income that I could eventually turn into my full-time gig.
Well life doesn't always work out as we plan, but it works out as it is meant to, I believe, so here I am. Thrust into an uncertain time in my life and craving homemade doughnuts!
I bought this book during the phase of my life when I thought I wanted to open a doughnut shop with a couple of my friends. But it became clear pretty early on that they were not as keen to put in the work as they were to just have it done and ready to go.
Flop.
But I still had my paying job, then!
Back to the doughnuts!
I do my best. But I am a lazy baker and often do one little thing that sets the whole process off. This time it was using a recipe for yeast doughnuts but not realizing I had the wrong yeast.
I normally bloom my yeast in warm milk and a little sugar...
This recipe called for throwing a quick rise yeast right in with everything else.
So I altered the recipe a little in order to bloom my yeast first.
It did what it needed to. The dough turned out okay.
I even got to use my biscuit cutter...which turned out to be very dull and it was a few tries before I was able to actually CUT the hole out.
Onto the frying, where I have an old thermometer/wooden spoon set up in order to keep the thing from A) touching the bottom and B) falling into the oil.
All in all they came out looking pretty yummy!
I even got that perfect 'sideline' you get when you know your dough has risen properly and you've fried it to perfection.
Unfortunately I do lose the enthusiasm as the time ticks by, and I'm still frying dough, looking at the jelly that still needs to be piped in and the frosting that still needs to go on top.
So out comes that lazy baker! Just do whatever to get it all done!
Not enough jelly in a couple, and a really sad attempt at a chocolate glaze. I used the bowl that had granulated sugar in it, which did not melt...sugar chunks...rookie mistake. Lazy bakers don't care though ;)
Despite my shortcuts they came out super delicious, if I do say so myself.
There's really nothing like fresh baked goods at home, I think. I try not to eat too much sugar, so when I do indulge in sweet treats I feel less awful when I make them, knowing exactly what's in there.
Sadly, though, they do not stay crispy on the outside and fluffy on the inside after sitting and especially not after being locked up in a tupperware overnight.
Will it stop me from eating every one of those doughnuts?
Not likely.
