1/2 cup unsalted butter, melted
2 eggs
2 teaspoons vanilla
3/4 cups natural peanut butter
1 cup maple syrup
1 1/4 cups flour
3/4 teaspoons baking powder
1/2 teaspoon salt
1 tablespoon maple syrup
2 tablespoons icing sugar
In a bowl, whisk together butter, eggs and vanilla. Add peanut butter and syrup and mix. Add flour, baking powder and salt and mix. Pour batter into 8 x 8-inch (20 x 20 cm) buttered and floured pan. Smooth the top.
Bake in preheated 325°F (160°C) oven for 25 to 30 minutes or until toothpick inserted in centre comes out with a few moist crumbs. Let cool completely.
For this recipe, it is a good idea to leave our eggs at room temperature for 1 hour before using them and make sure our melted butter is not too hot. Otherwise, the eggs will cook in butter!
