Hello friends,
Today I made a chicken taco soup for my family. I didn’t follow the recipe, because I forgot to buy some ingredients. So here is my version of this soup. It was still pretty tasty. Everyone loved it.
Ingredients
- Chicken breast-1
- Oninon-1
- Garlic-2 cloves
- Carrots-2
- Oil for cooking
- Water
- Taco seasoning (oregano,chili,cumin,paprika,garlic powder)
- salt to taste
- Can of Chili beans
- Canned sweet corn (I substituted with canned black beans)
- Corn chips
- Sour cream
- Shredded Mozzarella
Process
I added all the seasonings to the meat and cooked chicken breast in oil first. You need to turn it to another side when it looks brown.
When both sides look brown I added water and cooked in water for about 30 minutes, you need to check when it’s ready.
Then in a pan I added some oil and sautéed chopped onion and garlic. After a fee minutes I added chopped carrots and cooked for about five minutes.
I added sautéed vegetables to the pot with cooked chicken. After that I added canned Chili beans, here I want to add that this recipe calls for canned sweet corn, and since I didn’t have it, I added another can of plain black beans.
I divided chicken into pieces using two forks, and poured soup in the bowls.
Since it’s kind of a Mexican style food (I tried), I added some avocado.
Now we can enjoy our hearty chicken taco soup with blue corn chips, shredded cheese and a spoon of sour cream.
Kids loved it and asked for seconds 👩🍳.
