Let's have a quick and easy recipe today using corned beef. To be honest, I am not really a fan of beef even in cans, though there are two brands of corned beef that I can tolerate the smell and the taste because they aren't that strong. They are American Corned Beef and Highlands Corned Beef.
But my husband and my daughter @tegoshei love any beef dishes. So sometimes I cook beef dishes for them, like beef steak and beef stew, and sometimes we're just having some canned corned beef, like what I cooked today.
Since we don't have those brands that I like, I just used what's available in our mini sari-sari store. Actually, this corned beef is free because there's a promo in the newly opened supermarket near our house. They have promos of some selected products in the grocery store, like if you buy 6 pieces of the items, you'll get one of them for free.
So, this "Holiday" (brand name) corned beef is one of their promo products, and this is saleable in our mini sari-sari store. So, I cooked the can we got today, and just mixed it with potatoes, so I can eat it with them.
Hereβs what I did. Please come and let's have a look.
Wash and peel the potatoes, then slice them into small cubes.
Peel and wash the onions, then slice into two different shapes, like what is shown in the photo, which is thin slices and tiny cube slices.
Crush and peel the garlic, then cut into small pieces.
Set all the prepared ingredients aside.
Heat a small amount of canola oil in a pan and then sautΓ© the thinly sliced onions. Just cook it slightly, then set aside, and this is for garnish later.
Add some canola oil again to the same pan and then fry the potatoes, sprinkle just a little salt and garlic powder while frying them until they become crisp and tender. Then set aside.
With the remaining oil in the pan, sautΓ© the small cut onions and garlic until fragrant. Then add the corned beef and sautΓ© it over medium heat together with the aromatics. Stir constantly until the fats from the corned beef render. I added the juice from pineapple tidbits to enhance the flavor and the aroma.
Then season with just 1 tbsp of Knorr liquid seasoning and ground black pepper. I didnβt add salt because corned beef is already salty.
Then add the pan-fried potatoes and mix them thoroughly. And lastly, add the pineapple tidbits and mix them well. Since all the ingredients are already cooked just continued mixing them in low heat for a short time, and is now ready to serve.
Just garnish some thinly sliced onions. That's how quick and easy to prepare this dish and a budget friendly too.
