Roast with meat and potatoes. The Legend of Bessarabia

Ever since I was a little girl, I loved the way my grandmother Vera cooked. She was a God's cook. After going through two hunger strikes, she knew how to cook very well, probably on a genetic level. I wrote about her once, she was of the kulak family, that was the name given to people who worked hard and earned a better household and who had their own good houses, homestead and animals to work on the land. So, my grandmother used to make a meat roast with potatoes. Perhaps this is not the healthiest dish, if you remember the words of Batka, Alexander Lukashenko "How can you, eat potatoes with meat....". But today I'm not writing about healthy food, but about a dish that is loved in our southern Ukraine, in Bessarabia about "Roast with meat and potatoes".
Ingredients:
lean meat - 1 kg.
potatoes - 2 kg
onions - 200 grams
carrots - 100 grams
salt, spices to taste
sour cream - 50 grams

For this dish is very good any lean and juicy meat. You can make it with bacon or brisket without fat. There is bacon on the market, so very, meaty. There is practically no fat on it.
In the beginning I fry big chunks of meat or lean bacon or brisket in the cauldron. I stew a little bit. When the meat is almost ready, if it's young, it cooks much faster. Then in large chunks, I add potatoes. In the past, they were fried a little before being added to the cauldron. But it is not necessary to do so; it would be healthier without this frying.
At the end, I add salt, pepper and spices to taste. You can add a spoonful of non-sour, homemade sour cream. We sell two kinds of sour cream at the market: jug sour cream and separator sour cream. Separator sour cream has no sourness, it is cream with milk. Skilled hostesses make it very well. It can stand for a week in the refrigerator and will not lose flavor or sour. After stewing the meat and potatoes until tender. Adding spices and salt and sour cream. Let our dish stand for 10 minutes. Then you can put it on the table.))
