Saludos cordiales, comunidad de Foodies Bee Hive, para esta publicación concluiremos con el ciclo de preparaciones de comida árabe, para lo cual prepararemos el shawarma, específicamente como preparar la carne que sirve de vianda de este bocadillo.
Warm greetings, Foodies Bee Hive community, for this publication we will conclude with the cycle of Arab food preparations, for which we will prepare shawarma, specifically how to prepare the meat that serves as the vianda of this snack.
Ingredients
- 300 gr of chicken breast fillets
- 300 gr beef steak
- 2 or 3 teaspoons of paprika
- 3 cloves garlic
- 1 teaspoon of seven spice powder
- 1 teaspoon of sweet paprika powder
- 1 teaspoon onion powder
- 1 tablespoon vinegar
- 2 tablespoons olive oil
- Salt and pepper to taste
Lo primero será marinar la carne, para ello, agregamos los condimentos, el vinagre y aceite de oliva y los ajos, previamente triturados, y mezclamos todo, buscado que la carne quede bien impregnada, si lo considera necesario, puede usar un poco más de condimentos. Luego dejaremos reposar por una hora, antes de cocinarla.
Normalmente la carne de shawarma es cocinada en grandes brochetas que giran ante el fuego vivo, y de las que se va rebanado desde las capas superficiales hacía adentro, retirando así sólo las partes de la brocheta que ya están rostizadas. En mi caso yo use un horno rostizador y cociné toda la carne, para luego rebanarla, pues se trata de una cantidad relativamente pequeña, sin embargo, si no tiene un horno rostizador, puede cortar la carne en trozos más pequeños, de aproximadamente unos 5 cm de diámetro y ensartarlos en una brocheta de madera o metal y cocinarlas en una parrilla o sartén ligeramente aceitada, girándolas con regularidad para que se cocinen parejo.
En las brochetas, o en mi caso la barra del rostizador, iremos pinchando los trozos de carne, en mi caso lo hice alternando la res con el pollo, pues ya tenía pensado hacer los shawarmas mixtos, pero si lo prefiere puede usar sólo un tipo de carne o incluso agruparla en diferentes brochetas o en los dos extremos de la barra para así poder diferenciarlas.
Luego llevaremos la barra al rostizador o las brochetas a la sartén o parrilla y cocinaremos durante el tiempo que sea necesario para que esté cocida hasta el interior, generalmente esto es cuando supera los 70 °C en el centro.
Si lo cocina en un rostizador, es conveniente usar un recipiente en la base del horno que recoja los jugos que desprenda la carne durante la cocción y usar éstos para pincelarla ocasionalmente, para evitar que se reseque.
Una vez cocida la carne la retiraremos de la brocheta o de la barra del rostizador y cortaremos en tiras pequeñas.
Step 1
The first thing to do is to marinate the meat, to do this, add the seasonings, vinegar and olive oil and garlic, previously crushed, and mix everything, looking for the meat to be well impregnated, if necessary, you can use a little more seasoning. Then let it rest for an hour before cooking.
Normally the shawarma meat is cooked on large skewers that rotate in front of the live fire, and from which the meat is sliced from the superficial layers inwards, thus removing only the parts of the skewer that are already roasted. In my case I used a rotisserie oven and cooked all the meat and then sliced it, since it is a relatively small amount, however, if you do not have a rotisserie oven, you can cut the meat into smaller pieces, approximately 5 cm in diameter and thread them on a wooden or metal skewer and cook them on a lightly oiled grill or frying pan, turning them regularly so that they cook evenly.
On the skewers, or in my case the bar of the rotisserie, we will skewer the pieces of meat, in my case I did it alternating the beef with the chicken, because I had already planned to make mixed shawarmas, but if you prefer you can use only one type of meat or even group them on different skewers or at both ends of the bar to be able to differentiate them.
Then we will take the bar to the rotisserie or the skewers to the pan or grill and cook for as long as it takes for it to be cooked all the way through, generally this is when it exceeds 70 °C in the center.
If you cook it in a rotisserie, it is convenient to use a container in the base of the oven to collect the juices that the meat gives off during the cooking and use these to brush it occasionally, to prevent it from drying out.
Once the meat is cooked, remove it from the skewer or the rotisserie rod and cut it into small strips.
Con la carne lista y los restantes componentes del shawarma, preparados en mis anteriores publicaciones, sólo falta calentar el pan para montarlos. Para ello sólo colocaremos cada pan en una sartén caliente, durante algunos segundos, hasta que se estén calientes y se hayan ablandado.
Finalmente montaremos los shawarmas, para ello, con cuidado y ayudados con un cuchillo con filo, separaremos ambas caras del pan y las dispondremos sobrepuestas una al lado de la otra, sobre ellas colocaremos el tabule, la carne y luego la crema de garbanzos y la de berenjena, enrollaremos con cuidado y estará listo para comer.
Como ven yo he usado pan pequeño, pero si usan del normal, pueden agregar incluso más componentes a su preparación, como un poco de lechuga y tomate o incluso papas fritas.
Otra de las cremas que normalmente se estila comer con este plato es el muhammara o crema de pimentón rojo, lamentablemente yo no pude preparar ésta, pues no conseguí de estos pimientos, pero también es muy agradable contar con ella, pues le agrega un toque dulce al shawarma.
Step 2
With the meat ready and the remaining components of the shawarma, prepared in my previous posts, all that remains is to heat the bread to assemble them. To do this we will only place each bread in a hot pan, for a few seconds, until they are hot and have softened.
Finally we will assemble the shawarmas, for it, with care and helped with a knife with edge, we will separate both faces of the bread and we will arrange them superimposed one next to the other, on them we will place the tabule, the meat and then the chickpea cream and the eggplant cream, we will roll up carefully and it will be ready to eat.
As you can see I have used small bread, but if you use normal bread, you can add even more components to your preparation, such as a little lettuce and tomato or even french fries.
Another of the creams that is usually eaten with this dish is the muhammara or red pepper cream, unfortunately I could not prepare this one, because I did not get these peppers, but it is also very nice to have it, because it adds a sweet touch to the shawarma.
