First, I just want to say that I'm in the process of working on my intro to my cooking videos so there might be a couple that go up with no intro...well let me know in the comments below feedback would be great.: Intro or no intro?

My name is Lydia,

I post new cooking recipe videos here on Steemit every other day. I hope to help inspire others to make homemade food. It's not as difficult as many would think and much more delicious than anything you would buy pre-made!

Today’s treat:

Thai Curry Gnocchi

Ok, this is a complicated one...I won't lie... but it is delicious and worth it. Here's the instructions

1 package potato gnocchi (4 servings)
2 T olive oil
½ onion thinly sliced
1 minced garlic
5 mushrooms thinly sliced
10 cherry tomatoes cut in half
2 T red Thai curry paste
1 can coconut milk (regular, full fat)
1 t coconut sugar (or any sugar you have)
1 C spinach leaves
¼ t soy sauce
Salt and pepper to your taste

In a medium-large skillet, sauté the onions and minced garlic in your olive oil for 2-3 minutes. Next add in your mushrooms and sauté until oil absorbed. Add in your tomatoes and sauté for 2 minutes. Add red Thai paste and your full can of coconut milk and then stir in sugar and soy sauce. Add in spinach leaves.
Bring a pot of water to a boil, add salt and boil gnocchi to package instructions. Once the gnocchi are done, drain them and add to the sauce.
