Creamy Flan
1 cup white Sugar
4 Eggs
1 (14 oz) can sweetened Condensed Milk
1 (12 oz) can Evaporated Milk
1 tablespoon Vanilla Extract
Pinch of salt
Preheat oven to 350 degrees F.
In a medium saucepan over medium-low heat melt sugar until amber color (be careful to not overcook it). Also, do not stir the pan but do swirl it if needed. Carefully pour hot syrup into 8 ramekins, turning the dish to evenly coat the bottom and sides. (TIP: keep ramekins warm till you are ready to pour the hot syrup into them, this will help the hot syrup not set up right away).
In a blender add eggs, sweetened condensed milk, evaporated milk, vanilla and salt. Blend until smooth. Pour egg mixture through a sieve into a measuring cup. Place ramekins onto a baking dish and pour the egg mixture into the ramekins. Place the baking dish into oven and carefully add hot water up to halfway up the ramekins. Bake for 30-40 minutes. Carefully remove ramekins from water and let them fully cool. When ready to serve, run and paring knife around the edges and tilt upside down on a plate. Enjoy!
