“It came about back in 2009 when we were at Town House in Virginia. I was curing yolks in salt and things like that. I had my hands in pastry and was making ice cream and by accident I dumped sugar on the yolks. One of the things you don’t do is let sugar sit on yolks because it cooks them. I thought about that more. Fortuitous enough when we started working with @the__farm, the only thing coming from there in late March were the eggs. I wanted to show off The Farm with an egg dish.”
