Crisp meringue "nests" filled with delicious whipped cream and topped with fresh berries and chocolate makes perfect dessert. They are also really easy to make and most of the elements can be made ahead of time, which means that when the time rolls around when everyone is ready for an dessert, all you need to do is whip up some cream and spoon the filling into the nests. Add different berries, melted chocolate and you're done!
Meringues are one of my favorite cookies. I love their crisp texture that turns marshmallowy as it dissolves in your mouth. This is a dessert that should be assembled just before serving.

For the meringue
4 free-range eggs, whites only
100 gr caster sugar
For the filling
250 ml double cream
2 tbsp icing sugar
1 tsp of Vanilla extract
Fresh berries
