OK I decided that I'd make some leek and potato soup today as I'd picked up a load of leeks from the supermarket that were reduced in price. Now soup is dead easy to make and as I'm not a cook type person it must be. Now I do stress I mess about with cooking, I use dollops and guesstimates and see what happens. With soup though you're pretty safe (Well hopefully.)
So what I used:
3 leeks.
1 potato.
1 onion.
A good dollop of butter (Don't do measures)
1/2 pint of milk.
1 pint and a bit of vegetable stock.
So put the butter in a pan, dice up the leek and onions, the smaller the better then peel and dice up the potato. Add salt and pepper and heat gently for 10 minutes or so to soften the leeks and onion.
Add the milk and stock and simmer for 20 minutes.
All dead easy, then you let it cool a little before you put it into a food blender to smooth it out.
Now at this point I realised my food blender had disapeared so we're have a very rough and hearty leek and potato soup. If you have a food blender you can make it smooth and creamy instead.
Oh well have to go for a rich stew next so I don't need the blender.
Thanks for reading, hope nobody poisons themselves if they follow my recipie (Although really it's just a standard recipe for the soup.)
