Some times we find salad leaves a bit wilted due to hot weather, long transportation etc.

But don't throw them away! You may be able to restore their crispness.

Wash, dry and dry them gently in a container. Store the container for few hours in fridge.

Then you find them crispy again! I learned this from a veggie seller but it's more to batch wash leaves first to make the washing process easier. Yes, washing them everyday before dinner is a lot of work ...

I constantly have around two days amount of crispy leaves in the fridge in a container. Salad is a good addition for dinner, sandwiches etc. It's good not only nutrition wise but also color wise.

この時期葉物を買うと、お天気のせいでちょっと元気がなかったりします。庭からとってきた新鮮なものでも。でも、ちょっとした工夫でしゃきしゃき感を蘇らせられるって知っていましたか?

このテクニックは確か京都時代に八百屋さんに習ったもので、とても簡単です。

葉物を買ったらまとめて洗って、水を切って、タッパーに入れて、数時間冷蔵庫にしまっておく・・・!以上。びっくりするほどしゃきしゃきになっています。

この方法を知って以来、2日分くらいまとめて処理をしたものを冷蔵庫に常備しています。夕飯のサラダやサンドイッチ作りがとても楽になります。栄養面でも食卓のいろどりの面でもバッチリ。

サラダに使う葉物以外にも、紫蘇やバジルなどもこの方法でパリパリ保存できます。

ちょっとしたコツですが、みなさんの葉物ライフが快適になることを願って書いてみました。
