Es un gusto compartir con ustedes luego de una ausencia durante algunos días, en un merecido descanso nutriéndome entre saberes y sabores.
Les comparto que hace un año y un par de meses incursioné en la sabiduría milenaria de la acupuntura, aún en formación guiada por el conocimiento de mi dos maestras, me enamora el camino de la energía, el hombre visto desde la concepción celeste, el alimentarse con una visión consciente... es fascinante, me sumerjo en el -inconmensurable misterio-...
Entre las lecturas sugeridas hojeadas en el tiempo de reposo, hay un libro del maestro José Luis Padilla Corral titulado -Comer salud- menciona que en la medicina tradicional china existen cinco sabores esenciales, cada sabor representa un órgano (un reino, un color, un elemento) cada uno fundamental que combinados con ingredientes y especias dan energía Yin/Yang a nuestro cuerpo.
Sólo un poco de estos cinco sabores es suficiente para que las papilas gustativas las perciban y se distribuyan. Esta información rica e interesante me permite observar con atención cuál sabor prevalece y cuál reforzar en mi para equilibrar la armonía de este macro sistema que habito.
Por ahora les comparto cada sabor con su órgano y los invito a observarse amorosamente.
En la receta de hoy parte de los ingredientes estaban cocidos y reservados en la nevera facilitando esta deliciosa preparación de vegetales con los cinco sabores esenciales.

Among the readings browsed during the rest time, there is a book by the master José Luis Padilla Corral entitled -Eating health- he mentions that in traditional Chinese medicine there are five essential flavors, each flavor represents an organ (a kingdom, a color, an element) each one fundamental that combined with ingredients and spices give Yin/Yang energy to our body.
Just a little of these five flavors is enough for the taste buds to perceive and distribute them. This rich and interesting information allows me to carefully observe which flavor prevails and which to reinforce in me to balance the harmony of this macro system I inhabit.
For now I share each taste with its organ and invite you to lovingly observe yourself.

Lavar las vainitas y llevarlas a cocción por 15 minutos con una cdta. de sal, luego las colocamos en agua fría para conservar su color.
Wash the pods and cook them for 15 minutes with a teaspoon of salt, then place them in water with smell to keep their color.
Picamos la cebolla y los ajos - Chop the onion and garlic
Rallamos el jengibre, retiramos la semilla del dátil cortamos en cuadritos, igual las alcaparras, reservamos
Grate the ginger, remove the seed from the date, cut into cubes and set aside.
Cortamos los plátanos y junto al coliflor reservamos.

En un caldero caliente agregué aceite, añadiendo la cebolla y ajos hasta cristalizar soltando sus aromas

Agrego las alcaparras, seguido del jengibre y el dátil. Removiendo con la llama baja.

Un plato blanco recibe a la este salteado, agrego unas gotas de limón, perejil picadito y pimienta molida.
