These muffins are great as breakfasts, deserts, snacks.. really they're just plain great!
The ingredients you'll need for this recipe are:
1 1/2 cup whole wheat flour
1 3/4 tsp baking soda
1/2 tsp chai spice mix
1/4 tsp salt
4 ripe bananas
1/2 cup vegan butter melted
1/4 cup maple syrup
1/2 cup dates
1/4 cup non-dairy milk (I use soy)
1 tsp vanilla extract
1 1/4 cup walnuts, roughly chopped and divided
The first step is preheat the oven to 350 degrees F.
In a large bowl, I combine the flour, baking soda, salt, and chai spices.
I another bowl, I combined the bananas, butter, milk, maple syrup, dates, and vanilla. I soaked the dates in warm water for a few minutes to soften them up, and used a hand blender to mix all the ingredients.
Mix wet and dry ingredients together, fold in the walnuts.
Pour the batter into a muffin tin, and add remaining walnuts on top.
Bake for 20-25 minutes, then let cool in tin for 10 minutes, then move to cooling rack.
